Put in a blender or mix thoroughly by hand:
1 cup cottage cheese
2 tablespoons walnut or almond oil
This mixture is the foundation recipe and can be varied by adding these items to the mixture:
- Add finely grated horseradish. Serve with potatoes, buckwheat, and/or stewed carrots.
- Add tomatoes or tomato puree to taste. This is especially delicious with rice, bulgur, or rye bread.
- Add chives, onion, parsley (finely cut), or paprika.
- Make Hanna’s colored surprise by dividing the foundation blend into three parts and adding tomato puree or beets to one part, spinach or other greens to the second part, and egg yolk to the third. Arrange nicely and decorate with cucumber, tomatoes, radishes, etc.
- Heap the foundation recipe on lettuce leaves and top with a peach or apricot.
- As a dessert, use the cottage cheese sweetened with honey. Add a banana, a grated apple and some oat flakes on top.
- Add honey, filberts, walnuts, and almonds all finely cut. Do not use peanuts. This is terrific for the center of a variety fruit plate and is a whole meal!
- Use as a salad dressing thinned with milk or thin cream. Add tarragon, parsley, paprika, rosemary or any herb or spice. Also add vegetable salt and a little lemon juice and more oil.
- Use the above salad dressing with any endive or white cabbage salad. Wild roses can also be added to any salad; cut them just before they are in full bloom.

Over the years, whenever I relocated to a different climate or different elevation, I would mix up a variation of this marvelous recipe! I called it ‘my adjustor’ and this combination deterred any health problems for me that others had that were the result of the heat/cold/wet/dry local conditions. !! Thanks! Hanna.
